I put drained chili beans, black beans, purple onion, green peppers, corn, bow tie pasta, chopped baked chicken, the sauce mixture (I had to use ranch dressing, sour cream and the taco seasoning), cheese. Before we ate it I add crushed doritos to the top... good stuff.

Mexican Casserole

Its really good



Basically the recipe for the Mexican Casserole is... Brown and drain 1 lb. sausage, saute some green peppers/onions, cook enough rice to make 2-3 cups (or use leftover rice). Put all this in a bowl then added 1 can undrained mexican style tomatoes, 1 - 2 can of tomato sauce  (I just use 1 quart of my canned tomato sauce), 1 can of black beans and corn drained and rinsed (today I used 1 small bag of the corn we froze this summer), bag of shredded cheese (whatever you have on hand),  4 flour tortillas, sliced jalapenos for the top

Mix all ingredients (except the cheese and tortilla shells) together. Pour alittle tomato sauce in the bottom of your bakin dish (9 x 13), layer 2 tortillas, half the mexican mixture, some tomato sauce and cheese, repeat. Add sliced jalapenos to the top. Cook at 350 for about 45 mins. 

We put salsa and sour cream on our own serving .  
You could eat it with tortilla chips.  Taste great rolled up in a flour tortilla too....

ps I save the crumbs from tortilla chips and freeze til needed... so I added some to the top of the casserole to today.
