Frittata, Collard Greens, Banana Ice Cream

Good summertime dinner & desert...
 Ham, cheese, red potato, squash Frittata & wilted collard greens (with ham, onions, garlic). This frittata was so yummy today & this is how I like my greens cooked now.  Clean, chop, saute til wilted in alittle olive oil, with onion, garlic & ham (give or take)... then throw in a scoop of bacon grease... so so good.  The link to the frittata recipe is here: Frittata and Cranberry Bread

Now for the dessert... all you need is some frozen banana slices & peanut butter... 




Slice & freeze bananas for a few hours or whatever, add to blender or food processor, blend on high, scrap down as needed & it will turn into banana ice cream... now the fun part, add whatever you think will taste good.  We picked peanut butter. I just scooped a big spoonful in & blended some more.  There ya go.  Easy Peasy :)

Lets Talk About Freezin Eggs...

Did you know you can freeze eggs for future use... well I didnt til a few months ago. As most of you know I have a lil farm & here on Our Little Farm we get alot of eggs during the Spring & Summer, I use a ton of eggs in my kitchen to bake, cook with & we also eat many, many, many eggs. I also sell my yummy farm fresh eggs... but sometimes my egg customers cant meet me or they just arent ready for more eggs (they sure dont go through eggs like I do, lol). Anyways if ya ever find yourself over flowing with eggs & ya dont know what the heck your going do with em all... Freeze em :)

Take however many eggs you need for a recipe... lets say 6 (breakfast casserole), clean the shells, crack the eggs into a bowl, add a pinch of salt & whisk up, carefully pour into freezer bags, get the air out & freeze. We just bought a food saver a few months ago too so thats what I'm using & love it. Now to thaw your eggs out just run cold water over the bag & use. Or you could let them thaw out over night in the fridge.

Dying Farm Fresh Eggs...

~This post is a repeat from Easter 2011 ~

Kaylin & I dyed 4 doz. of our farm fresh eggs yesterday...
(I'll be makin egg salad with them)

In a small cup or similar sized container, mix drops of food coloring with 1 tablespoon of vinegar. Then add 1/2 cup water






I found these very cool eye dyin ideas on these 2 blogs...
Cackles & Berries and Sprout 'n' Wings I'm really glad I found them, I will never buy a dye kit again. Hope everyone is havin a nice Easter with your family/friends...

Frittata & Cranberry Bread

Heres what we had for dinner tonight...
Basic Frittata from CheapCooking.com



Aint them cranberries so pretty...

Classic Cranberry Nut Bread
(I made the recipe on the back of the Ocean Spray bag)

Ingredients:
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons oil
1 egg, well beaten
1 1/2 cups Cranberries, coarsely chopped
1/2 cup chopped nuts

Directions:
Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan.

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf

German Pancake

Seen this German Pancakes recipe on Katiegirl blog this mornin & thought I'd give it a try. Its really good, reminds me of french toast. It would be good with cooked crumbed sausage or bacon added to it before you bake it ;)



German Pancake Recipe
Preheat oven to 400* F

1/4 cup real butter
1 cup goats milk
4 fresh eggs
1 tsp almond (Katiegirl used vanilla)
1 cup flour
2 Tbsp sugar
pinch of salt

1. Place butter in an 8" cast iron skillet and place in the oven to heat pan and melt butter.
2. Combine milk, eggs, and vanilla in bowl and mix well.
3. Add flour, sugar, and salt and mix until smooth.
4. Remove cast iron pan from the oven and pour in batter.
5. Bake for ~18 minutes until browned and puffy.

Then you can wait for it to collapse/cool a tad and serve with syrup, powdered sugar, etc.

Homemade Egg Nog

I made homemade egg nog for the 1st time today...

Fresh Eggs from Our Little Farm


My family really likes it :)

Homemade Egg Nog

6 farm fresh eggs at room temperature and separated
3/4 cup sugar (for the yolks)
6 TBS sugar (for the whites)
1 tsp vanilla extract (one of these days I'm gonna have my own bottle of homemade)
a few dashes of nutmeg (or freshly grated)
1 cup of cream
4 cups of raw goat milk

Started with the egg whites..beating them to soft peaks. Then gradually adding 1 TBS sugar at a time until all 6 TBS have been added and stiff peaks form. Put in a bowl to the side. In a large bowl beat egg yolks until lighter in color. Gradually add 1/3 cup of sugar at a time and beat until dissolves..adding more sugar slowly until you've added the 3/4 cup of sugar. Add the milk, cream, nutmeg and vanilla to the egg yolk mixture. Stir to combine. Whisk egg whites into milk mixture. Chill before serving.

Was needin to use up some farm fresh eggs last week so I made a hm pound cake for the 1st time, heres the R-E-C-P-I-E I used. We liked it. I also made a wildberry sauce to pour over it.

Playin with chickies, Shoot me 6/52

If you dont know by now I have alittle farm... started out in 2009 with chickens, then guineas, then farm cats (one is gonna have kittens any day now), then ducks & then a pot belly pig... I love it. I hatched out 17 chickies last weekend & here I am playin with them...

We have our 1st boody Buff Orpington hen...



I'm soooo excited! Shes been sitting in this nest box since Monday 9/7... I notice her when I went to check on the chickies around 3ish and there she was sitting on a golf ball, she was still there when I put them to bed for the night and she was STILL there then next morning! So I thought ok maybe she is broody, I took the golf ball out from under here and add 10, thats right 10 eggs!!! So hopefully in about 21 days we will have little chickies (Buff Orpintons and Road Island Reds I do believe)

Chickie Count down starts today, I'll keep ya posted :) 20 days to go......................
