Oatmeal Cake

One of my very favorite cakes to make from scratch.... 


Preheat your oven to 350, grease a 13x9 baking dish or pan, set aside.

Combine 1 cup of quick-cooking rolled oats ( I use old fashioned) with 1 1/2 cups of boiling hot water in a small bowl; let set for about 20 mins. In the meantime, in a med. bowl combine 1 1/2 cups of all-purpose flour, 1 1/2 tsp. cinnamon, 1 tsp. baking soda and 1/2 tsp salt. Then in another mixing bowl beat 1/2 cup shortening (coconut oil), 1 cup sugar, and 1 cup of packed brown sugar with mixer until combined. Beat in 2 eggs (duck eggs), then the oatmeal mixture. Add flour mixture; beat until combined. Then Spread batter in prepared pan, bake for 30 to 35 minutes or until wooden toothpick inserted near center comes out clean. Place on wire rack to cool.

For Topping...
In a saucepan combine 6 Tbsp. butter, 1 cup coconut, and 2/3 cups packed brown sugar and 2 Tbsp milk. Cook and stir until boiling. Stir in 2/3 cups of chopped walnuts. Spoon topping over cake, cool completely and enjoy :)

Pumpkin Scones

While browsing blog world last night I came across this scone recipe  Gingerbread Scones  on Heritage Schoolhouse blog and told my honey I was gonna make them in the morning... well its morning and I realized I didnt have any molasses so I seen I had a can of pumpkin in the pantry... so why not make Pumpkin Scones.  I searched her blog and found this Pumpkin Scones recipe.  


I actually started out with the Gingerbread recipe and then just added the pumpkin pie spice, 1 more Tablespoon of brown sugar and 1/2 cup pumpkin.  Then after the baked and cooled alittle I mixed up powder sugar, milk, vanilla and pumpkin pie spice for the glaze... So So Yummy!

Cow Pattie Cookies... aka No Bake.

 Ok so They're just no bake cookies, but the name sounds cooler, found this recipe in the Kentucky Living magazine








Cow Pattie Recipe...

2 c. sugar
1 stick butter or margarine
1/2 c evaporated milk
1/2 c. peanut butter (smooth or crunchy)
2 T. cocoa
1 tsp. vanilla
3 cups oatmeal , uncooked (I used old fashioned)

Mix sugar, milk & butter in saucepan, bring to boil, boil for 1 min. Remove from heat stir in peanut butter & vanilla. Stir in cocoa & oatmeal. Drop by spoonfuls onto wax paper.

*Leave out cocoa for just peanut butter cow patties... taste like fudge to us

Cranberry Almond Scones...

These are my very 1st scones ever... I like em.  
They remind me of a pop-tart... only better & healthier for ya too

I used this Basic Scone recipe, then added chopped frozen cranberries, almond extract instead of the vanilla & almond slivers.  I also added more flour, my dough was sticky from using frozen cranberries. 




The Family Likes Em Too ;)

Frittata & Cranberry Bread

Heres what we had for dinner tonight...

Aint them cranberries so pretty...

Classic Cranberry Nut Bread
(I made the recipe on the back of the Ocean Spray bag)

Ingredients:
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons oil
1 egg, well beaten
1 1/2 cups Cranberries, coarsely chopped
1/2 cup chopped nuts

Directions:
Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan.

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf

Italian Round Bread

After doin alittle house chores & alot of barnyard chores today (cleanin & scrubbed 2 coops) I didnt have much time to bake bread and I really wanted some bread to eat the Fresh Basil Pesto I made yesterday ( love love pesto now), so I wanted a fast, easy round bread recipe and one of my friends send me one to try. Recipe here Italian Round Bread

The family liked it, 1 round is gone. This recipe is a keeper in my kitchen.

Dill & Me Bakin Cookies, Shoot me 47/52

Dylan had to make cookie for a school thing, he picked sugar cookies so thats what we did last night... its a White Lily recipe I've had for ages. I wanted to bake snickerdoodles... Ooooo well theres always next time.

Bummer with baking today...

Some of the things I bake/cook do not always turn out the way I want them too, like today! But I dont let that discourage me from trying new recipes. Sometimes I'll try and try until I get it and other times I just wont make it again :)

Today I tried to make Chocolate and Blackberry Roulade with Blackberry sauce... it was suppose to turn out like this But mine did not and it was all my fault I've never made a roulade before (never even heard of it, lol) and I've personally never rolled a cake, Brian has (hes made a yummy pumpkin roll though the years), I've never whipped egg whites, had no clue what I was doing there, lol. Then come to find out I didnt have any parchment paper so my cake kind of stuck to the pan... I got it off. Also I didnt read the part of the recipe that called for heavy cream! Thats just not something I keep in the house... so I had some cool whip in the freeze I substituted for it, it worked ok. I didnt use the raspberries cause I wanted to use some of our frozen blackberries from summer.

The Roulade is done and in the fridge, I'll whip it out after dinner. I did taste it, its fine, nothing to get excited over. So when I'm better prepared I'll make it again and see how that goes.

Snow Day #3

Today was snow day #3 and I think we all are getting alittle STRESSED! ALL 6 OF US HOME... ALL THE TIME... FOR 5 DAYS... dont know how many more days we can take. We "NEED" school, its our only break from each other! lol

The kids get bored and want to eat EVERYTHING in the house and right now theres not much to be choosing from (need to go grocery shopping) but Dylan did find stuff to make flourless Peanut Butter Cookies... he made them all by himself and they tasted yummy, he put choc. chips in one batch, those were really good.

Flourless Peanut Butter Cookies...

Preheat oven to 350
1 egg, 1 cup peanut butter, 1 cup sugar
(if you want added alittle choc. chips)
Mix together in a bowl
drop by tsp. full on cookie sheet
bake for 8 - 10 mins.

P.S. NO SCHOOL AGAIN TOMORROW... better get moving tomorrow and get more cookie supplies! Atleast when their mouths are full they cant argue, lol
