Mexican Rice and Black Bean Casserole
Chicken a' la King w/Cornbread

"Hamburger-Cornbread Casserole"
1lb. of cooked, drained hamburger
1 med. chopped onion, 1 chopped green pepper, sauteed
1 sm. (8 oz) can of tomatoes (I use 1 quart of my canned tomatoes)
1 (16 oz) can red kidney beans
handful of shredded cheddar cheese (if ya want)
1 box cornbread (I mix my own from cornmeal)
Preheat oven 425
In a large bowl mix together hamburger, onions, peppers, tomatoes, shredded cheese and red kidney beans. Salt/pepper to taste. Add ingredients to a casserole dish. Prepare cornbread and spread over top of hamburger mixture. Bake 20-25 mins.

"Chicken a' la King"
1 thawed bag of mixed veggies (peas, corn,carrots, g.beans, lima beans)
1 cup of sliced mushrooms (more if ya like)
1 1/4 chicken broth
1/4 cup butter or margarine
1/3 cup flour
3/4 cup milk
1/4 cup cooking sherry or apple cider
2 cups cooked, chopped chicken
1 tsp. dried tarragon (I use more, I love the taste of it in this recipe)
salt and pepper
6 squares of corn bread
Combine mixed veggies, mushrooms, broth in a med. saucepan. Simmer, covered, until veggies are cooked. Drain, reserving veggies and broth in separate bowls. Melt butter in a large saucepan over med. heat. Add flour. Cook, stirring continually for 1 min. Whisk in reserved broth, milk and sherry or apple cider. Reduce heat. Cook, whisking continually, until thickened, about 2 mins. add chicken, mixed veggies, tarragon, salt, pepper. Heat to serving temperature. Spoon chicken mixture over corn bread square and enjoy :)

"Mexican Rice and Black Bean Casserole"
Basically the recipe for the Mexican rice and black bean cass. is... Brown and drain 1 lb. sausage, saute some green pepper, cook enough rice to make 2 cups (or use leftover rice). Put all this in a bowl then added 2 cans undrained mexican style tomatoes (I just use 1 quart of my canned tomatoes) about 1/2 shredded cheese, 1 can of black beans (drained and rinsed) and I also added a can of drained corn. Mix all together, put in baking dish and cook at 350 for about 45 mins. We put salsa and sour cream on our own serving . We also ate it with tortilla chips, I think it would taste great rolled up in a flour tortilla....
