Christmas Mornin Cookin... Shoot me 46/52

Brian and I in the kitchen Christmas mornin cookin the family breakfast... we had Quick & Easy Egg Casserole (I made 2 of them, 1 with sauteed mushrooms, onions & green pepper and 1 without), and Brian made the Pancakes. We had some wild-berry topping/syrup over them.

Ok... Kaylin really surprised us on this shot, lol.

Quick & Easy Egg Casserole
Heat oven to 350°F.


6 eggs
6 slices of white bread, torn into bite size pieces
1 lb. sausage cooked & drained
1 cup of shredded cheddar cheese
2 cups milk
salt, pepper & whatever seasoning you want to add


Place bread in 13x9-inch baking pan or casserole sprayed with cooking spray; top with sausage and cheese. Beat eggs, milk, salt and pepper with whisk until well blended; pour over ingredients in pan. Bake to 45 min. or until casserole is set in center and top is lightly browned.

W.I.P. Wednesday...

Well I'm still busy, busy, busy with crochetin, baking goodies, animals, Christmas shoppin and just plain ol life!

These 2 regular puff stitch hats went with 2 scarves, forgot to take a pic of them together, mailed them out yesterday.

Yummy Cake Balls...

You will need 1 boxed cake mix of your choice, a container of icing and bark (white, chocolate or both)

1. Bake your cake to box directions, let cool for 1 hour.
2. In a large bowl crumble the cake.
3. Then add about 3/4 the can of frosting, any more than that and I think it makes it too mushy.
4. Roll the cake mixture into balls and place on a lined cookie sheet and put in the freezer for 1 hour to harden, this makes it easier when dipping the cake balls into the chocolate.
5. Melt your chocolate bark in a bowl.
6. Then take the frozen cake balls and dip them in the chocolate and roll them till fully covered, place them back on the lined cookie sheet to harden, then enjoy :)

This was my 1st time makin them, I made 1 batch of Strawberry cake, cream cheese icing and milk chocolate. Then another batch of hm pumpkin cake/zucchini bread (I had these in the fridge and they needed to be used up), with leftover icing from Christmas Cookie Night and white chocolate. I used a Tablespoon of cake mixture for each cake ball, next time I'm gonna make em smaller.

* The great thing about these balls is you can play around with a number of different cake mixes, icing and bark and come up with some really great ideas.
