A Simple Summertime Pleasure...

Toasted fresh garden tomato/cheese/mayo/basil sandwich... yum yum good! Now I really love to make this with pepper jack cheese but we are out so I gotta use whatever kind of cheese is in the house. Think I'm gonna make me another one for breakfast in the morning :)

Breakfast Burrito, Camping Style

We've been making these Burritos for years now when we go camping (we make them at home too, easy fast breakfast), they are great!





Breakfast Burritos

Things you need...
quart-size ziplock freezer bags
large pot of boiling water

Ingredients...
1. Eggs ( 1-2 per baggie, today I used 3 bantam eggs)
2. Anything you would like in your omelet like... shredded cheese, ham or sausage (already cooked), salsa, use your imagination possibilities are endless

Directions...
1. Bring your water to a rolling boil.
2. Crack 2 eggs into the quart size ziplock bag, shake to combine them.
3. Add the prepared ingredients of your choice to your bag and shake.
4. Make sure to get the air out of your bag and zip up.
5. Place bags into boiling water for 15-20 minutes. When done carefully take out of pot and cut open the bag. Be carefully of the steam. Your omelet will roll out easily onto your plate or tortilla.

Camping/Lake Family Vacation...













So this was our family vacation this year... we love to camp and we where only 30ish mins from home. We had a really great time just hanging out with each other, no phone, tv, computers... nice! Ice Cream Sandwich Cake


Ice Cream Sandwich Cake
  • 2 packages of cream sandwiches
  • Jar of hot fudge sauce
  • Jar of caramel sauce
  • Peanut butter
  • Container frozen whipped topping, thawed
  • Chopped nuts
  • Place a layer of ice cream sandwich side by side in the bottom of a 9 x 13 pan. Melt peanut butter in microwave, spread over ice cream sandwiches. Add another layer of sandwiches. Top whipped topping. Sprinkle chopped nuts on top and freeze til ready to eat. Then right before serving melt hot fudge and caramel in microwave, drizzle over top and enjoy :)

Baking/Cookin Therapy...

Got in some good baking/cookin therapy today, I was feeling alittle sad today, family stuff (could you keep my family in your prayers) so I turned to my trusty kitchen to cheer me up... put together a Texas Banana Puddin, baked 2 Double Chocolate Chip Zucchini Cakes (to freeze and serve at later dates, never now when ya might need a cake, thaw them babies out, whip up some cream cheese frosting yum yummmm good), 2 zucchini bread (froze 1), processed Maters and made pasta sauce for later in the week, then made hm flour Tortillas, had steak fajitas for dinner.

Shoooooo no wonder I'm so tired now, lol

Canning Pickles. Shoot me, week 22/52

This weeks shoot me pic. was taken when I was canning pickles the other day...

I started canning 3 summers ago and love it. I try my best during harvest time to can/freeze enough to last us all winter long, plus alittle to share with family/friends at Christmas time.

**Today I picked a 5 gallon bucket of Maters... I'll be working on them in a couple of days, gotta put then in the kitchen window to ripen the rest of the way... if I leave em on the vine the chickens like to taste a few, lol. Now Brian did make us some fresh salsa to go with dinner tonight, taco salad... I love fresh salsa!

Happy 17th Birthday Cody...

We took Cody out last night for his birthday date... dinner and a movie. We went to Texas Road House and seen The A - Team, good movie :)


* Cody, Brian and I all decided last night we really dont care for going out to eat anymore, its just not worth it, we think I cook better food at home. For the past 6 or so months everytime we go out to eat it kind of sucks, it seems to us that restaurants have went way down hill with their service and their food, or maybe I've just spoiled my family with my cooking in Jenny Crockers kitchen, lol?!?! So startin next year for birthdays we are going to do a family dinner/cake at home then take that b-day person out to a movie of their choice.

My Kitchen Window...

A friend of mine made this comment the other day, "You must have a lot of great windows... there's always sunshine in your lovely pics!" Well I take most of my pics. from the kitchen and we have this wonderful huge window right in front of the sink that lets in all the beautiful sunlight, I love it . (Plus we have a sliding glass door.)

So when I have to wash dishes atleast I have a pretty view. I love looking out this window, one of my bird feeding stations is right out back...
