Upside Down Pizza


Cook and drain 2 lb ground beef. In a bowl mix ground beef , 2 jars of pizza sauce (or make your own) and some chopped up pepperonis then put in a 9x13 baking dish. Then add a layer of mozzarella cheese (2-3 cups).

Then in a bowl mix 1 1/4 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1/4 cup oil, 3 eggs, some garlic powder, basil or Italian seasoning and 2 cups milk pour over pizza ingredients, bake at 400 for 30 min or so. Enjoy

* You can also add cooked veggies (onions, peppers, mushrooms) to the dish , I highly recommend this :)

Feeding our ducks... Shoot Me week 28/52

Dylan caught me feeding our ducks some scratch 1 1/2 weeks ago...
I'm trying to get them use to me, I want to hold and pet them.

Apples...

Kaylin and Travis went to a neighbors house and picked us a 5 gallon bucket of apples last Sunday and heres what I done with them though out the week...

I've made this twice this week!


I plan on eating this with vanilla ice cream on top, topping for my pancakes or maybe cook it in the batter, I heard it taste like an apple fritter and I love those!

My Oldest Friend... Shoot Me 27/52

This post is about my oldest friend... Kim... she came down with her family for a visit. Heres a pic. of us with our kids. Our Mommas were best friends, we've known each other since birth. Gosh I remember through out our childhood I was either at their house or shes was at ours... Shes not only one of my Bestest Friends... SHES ALSO A SISTER TO ME.

Hummingbird Explosion!

This is the month to see tons of Hummingbirds at your feeds...
They are bringing their families. We got to see a special treat at our backyard feeder this week, it was really cool to see so many hummers flying in our yard! I have 3 feeders out but this one is their favorite.

Happy Birthday Brian...

Birthday Breakfast...
HM French Toast, With Wild Blackberry Cream Cheese and HM Syrup

Dinner... Pizza In A Bowl, Salad and Garlic Bread


Then Dessert...
Hot fudge, Butterfingers, Caramel Ice Cream Sandwich Cake

*Recipe for Pizza In A Bowl... (makes 6 servings)

You will need... (now I double this recipe for my hungry crew, 4 teenagers can eat!)

2 cups of dried rotini noodles, cooked and drained.
Pepperonis, sliced (save some whole ones for the topping)
1 lb. hamburger, cooked and drained.
1 15 oz. can of pizza sauce (or make your own)
1 8 oz. can of tomato sauce (or make your own)
1 6oz. can of tomato paste
1/2 tsp sugar
1/4 tsp. garlic salt
1/8 tsp. pepper

2 cups shredded mozzarella cheese
Parmesan cheese

Preheat oven to 350. Mix everything together in a big bowl (but the cheeses). Now put a layer of the mixture in a pan, layered with mozzarella cheese, then another layer of mixture, sprinkle on top with the rest of the mozzarella cheese and Parmesan. Top with pepperonis. Bake in oven for 30-40 mins.

Cat Lady/Chicken Lady, Shoot Me week 26/52

This is Angela (cat lady) we met in middle school, 6th/7th grade... we've gotten back in contact with each other through good ol facebook, lol.

Chicken lady (me) was up delivering eggs a couple weeks ago and she surprised me by showing up in the parking lot where I meet my egg customers... she had brought me a spider plant she had started for me off her spider plant. I've never owned a spider plant and hope I dont kill it, lol. Sometimes I forget to water my plants. I've sat it in my kitchen on the island so maybe I'll remember, so far so good.


I think its pretty :)

They Love Cinnamon Rolls...

Kaylin asked me to make them cinnamon rolls for breakfast last Friday, for their 1st week back to school, shes so silly and I love her. I was up before 6:00 baking...

You kids should be glad I love you. I Hope you all have a great school year.

Cinnamon Rolls...
Combine 2 cups sifted ap flour, 1 tsp. salt, 1T. baking powder and 1/4 tsp.baking soda in a medium bowl and mix well. Add 1/4 cup oil and 3/4 cup of milk and stir until blended. Knead dough, on a lightly floured surface roll into 15/18 rectangle. Preheat oven to 400. Grease your baking dish(es) lightly. Spread 8T. (1 stick of butter), softened all over dough. Combine 3/4 sugar and 1 tsp. cinnamon in a small bowl, mix well, sprinkle all over buttered dough. Roll up rectangle jelly roll style. Cut into 1 1/2 inch slices. Arrange the slices cut side down in your prepared baking pan. Bake until lightly browned, 15-20 mins. Cool alittle, put on icing and enjoy :)

*** I mix up a block of soften cream cheese and powdered sugar for the icing.
