Tomato, Spinach, Pasta And Yogurt...

Tried a new recipe yesterday for dinner, its a Kraftfoods.com recipe. I saved all my Kraft Food and Family magazines from 2004-2009. I'll look back through them from time to time and try something new. Heres the link for the recipe...

Tomato & Spinach Pasta Toss



We had salad and hm bread with it...

*Over all I think everyone liked it (I did), but some of The Teenagers picked out the tomatoes and spinach, lol.

I made a batch on hm crockpot yogurt last night, it doesnt turn out real thick so I put it in containers and drain it in a strainer lined with coffee filters (turns out like Greek style yogurt), I get 16 1/2 cup servings before drained.

Heres how I eat mine... 1/2 crockpot yogurt, 1/3 cup mandarin oranges, 1/2 cup of crushed pineapples, 3 tsp of coconut and alittle chopped nuts... Tropical Parfait

First S'mores of the season...



Sat around the firepit this past Saturday with family and friends havin our first S'mores of the season... Oh they were sooooo good, lol. I ♥ S'mores! I keep a S'more kit all summer long cause Firepit ='s S'mores at our house!

Taco Bowls For Dinner...

Ok you may have made these before, but I havent and I just thought it was so too cool not to share, I'm weird like that... the littlest thing (like making homemade taco bowls) makes me smile

Yummy... Taco Salad

Heres how ya do it...
Preheat oven to 425, Crumble however many large sheets of foil to make 3 inch balls (I dont measure, just go by what looks right). Place 1 tortilla on top of each foil ball; spray tortilla with cooking spray. Sprinkle chili powder on top, or whatever other spice you might want to use. Bake 6-8 mins. or until tortillas are golden brown. (Tortillas will drape over foil balls as they bake)

* I was going to just throw the foil balls way but then thought WHY not save them and reuse when I made taco bowls again... SOME might call me Cheap... but I call myself FRUGAL!

Why throw something away when you can reuse it?

Shoot Me... Week 6 of 52

Kaylin had the camera at caught me walking up from the coop this weekend, I had a little egg in my had, collected 21 eggs that day... on nice days I go to the coop ALOT... just to see and watch my chickens =)

Family Style Chicken Pot Pie...

Heres a chicken pot pie my family likes, maybe yours will too...

2 cups of cooked, shredded chicken
1/2 cup Italian Dressing
1 package Neufchatel Cheese, cubed
4 Tbsp. flour
1 cup fat-free reduced-sodium chicken broth
2 bags frozen mixed vegetables (peas, carrots, corn, green beans), thawed, drained
6 Buttermilk Biscuits

HEAT oven to 400°F.

Toss cooked chicken with Italian dressing in a big skillet. Add Neufchatel; cook and stir 3 to 5 min. or until melted. Stir in flour until well blended. Add broth and vegetables; stir. Simmer 5 min.

POUR into 9x13 baking dish; cover with 6 Buttermilk biscuits.

BAKE 15-20 min. or until golden brown.

I served mashed potatoes as a side and no bake cookies for dessert

Weekend Visitors...

Springs Here...
That means visitors, lol We love gettin visitors... My Momma, Clinton and Jake (3 year old nephew) came down to spend the weekend with us, then Crystal, Abby and Aaron came down for acouple hours on Saturday.

Had a pretty weekend, we stayed out in the yard Friday and Saturday... started raining on Sunday, but that was ok I was ready for a lazy day on the couch with my crochet hooks and a good movie... Ghost of Girlfriends Past.

This wants the original plan we had BUT... since we have all this rock to do things with we decided to go ahead and make a back patio with it.

We finished with the rock on Saturday...

We are going to get rid of those nasty steps and build wide wooden steps sometime in the near future. Also I'm going to add some flower pots and we got an old rocker that we need to redo and add some cushion, I think it would look nice sittin in the corner. I'll be sittin in it, crocheting watching my chickens and wild birds... its the simple things that make me happy.

Buttermilk Biscuts....

Made from the Sourdough Starter
I got from Trish @ Lovin' The Country Life

I dont roll my biscuits, I just pinch some off and shape it out

They may not be the prettiest biscuits in the world but they sure do taste good!

Cute lil Bantam eggs to go with the Buttermilk Biscuits


Sourdough Buttermilk Biscuits
3 cups flour
1 and 1/2 Tbsp salt
3 Tbsp baking powder
1/4 cup sugar
1 stick butter
1 cup starter
1 cup buttermilk

Mix all dry ingredients together. Cut butter into dry ingredients. Add starter and buttermilk and mix until soft dough forms. Turn out onto a lightly floured surface. Use only enough flour to keep dough from sticking to your hands. Do not knead the flour in the dough. The less flour you use to handle the dough the better. Excess flour will make your biscuits heavy and tough. I poured my dough out onto a piece of lightly floured wax paper, pinch some off and shape into biscuits. Put on a baking sheet and bake at 400 for 15-20 mins. ( I baked mine for 15 mins.)

I got 24 biscuits out of my dough.

Amish Friendship Bread...

One of my cousins gave me a bag of Amish Friendship bread last Sat. when I was delivering eggs, it was already on day 4. So I've been mushing the bag like it says and adding flour, sugar and milk to it when it said and today was the day I got to bake it and try some!

Pretty good...
Taste just like zucchini bread without the zucchini/nuts. I baked 4 loaves, we've already at 1 loaf, got 1 for tomorrow and froze the other 2. I'm gonna try to give away 2 bags of starter and of course keep one for myself.

Sourdough Starter...

Sourdough Starter from Trish at Lovin' The Country Life...
1 package of active dry yeast
1 cup milk
1 cup flour

Mix the three ingredients in a non-metal bowl with a non-metal spoon, cover loosely with a lid, it needs air and let sit out on your counter for 2-3 days...

* I messed up and added 2 cups of flour, so I went ahead and added another cup of milk and another yeast packet. I've got it in a ice cream bucket sitting on my counter, So we'll see if mines gonna work...

Finding THE Prom Dress...

Our baby girl is going to prom this year with her boyfriend Travis (its his jr. prom) So we've been in search for THE prom dress! Now everyone that knows me knows I DO NOT LIKE TO SHOP... I hate it, I know I'm a girl and I should love shopping but I dont! But when it comes to finding my daughter THE perfect prom dress I suck it up and go SHOPPING...........

We actually had a fun day shopping, walking, talking, laughing, eating, just hanging out having a Girls Day

pink and orange, she really didnt like it but I'd wear it!

Heres THE Prom Dress!

This was the 1st dress she liked at the very 1st store but they didnt have her size and we found it in every other store we went to! All the wrong size... So after alot of walking, dying of thirst many stores later WE FOUND IT! Woohoooo
