Thought I'd share a simple, hardy family favorite meal...
Hamburger Cornbread Casserole with mashed potatoes and green beans
"Hamburger-Cornbread Casserole"
(I double this recipe for our family)
1lb. of cooked, drained hamburger
1 med. chopped onion
1 chopped green pepper, sauteed
1 (8 oz) can of tomato sauce (I use 1 1/2 pints of my canned tomato sauce)
1 (16 oz) can red kidney beans
Handful of shredded cheddar cheese (if ya want)
1 box cornbread (I mix my own from cornmeal and I DO NOT double the cornbread when I double the recipe)
*** Today I also added some garlic powder and chipotle powder
Preheat oven 425
In a large bowl mix together hamburger, onions, peppers, tomatoes, shredded cheese and red kidney beans. Salt/pepper to taste. Add ingredients to a casserole dish. Prepare cornbread and spread over top of hamburger mixture. Bake 20-25 mins.
