One of my very favorite cakes to make from scratch....
Preheat your oven to 350, grease a 13x9 baking dish or pan, set aside.
Combine 1 cup of quick-cooking rolled oats ( I use old fashioned) with 1 1/2 cups of boiling hot water in a small bowl; let set for about 20 mins. In the meantime, in a med. bowl combine 1 1/2 cups of all-purpose flour, 1 1/2 tsp. cinnamon, 1 tsp. baking soda and 1/2 tsp salt. Then in another mixing bowl beat 1/2 cup shortening (coconut oil), 1 cup sugar, and 1 cup of packed brown sugar with mixer until combined. Beat in 2 eggs (duck eggs), then the oatmeal mixture. Add flour mixture; beat until combined. Then Spread batter in prepared pan, bake for 30 to 35 minutes or until wooden toothpick inserted near center comes out clean. Place on wire rack to cool.
For Topping...
In a saucepan combine 6 Tbsp. butter, 1 cup coconut, and 2/3 cups packed brown sugar and 2 Tbsp milk. Cook and stir until boiling. Stir in 2/3 cups of chopped walnuts. Spoon topping over cake, cool completely and enjoy :)
