I really wanted to make a spreadable cheese so I just followed that same recipe that I used for the 1st goat cheese I made then after about an hour of draining I put it in the food processor & added some whey til it was spreadable. I just seasoned it with kosher salt, cracked pepper, basil, garlic powder... really it takes on the flavor of whatever herbs you use. I really think this would be good with bits of bacon, green onions... or basil pesto mixed in it. ;)*This would make a good ricotta too
