Potato Candy...

Heres how I made it today...
1 small peeled boiled potato
1 tablespoon butter or margarine
1/2 teaspoon vanilla extract
powdered sugar
peanut butter

Mash potato, add butter, vanilla in a bowl

Then add enough powdered sugar to make a slightly stiff dough.

Roll out dough (on a surface dusted with powdered sugar) and spread on the peanut butter.

Roll dough up (as for jelly roll) to make a log.

Cut into pieces, let air dry for about an hour. Store in air tight container.

* I remember my mamaw making this when I was alittle kid and it was good, this is my 1st time making it. I think I should have rolled the dough out thinner and I think I'm going to cut the pieces smaller... its very sweet. I wish someone was here to try it, tell me how it taste and if I did it right. The kids will try it when they get home FROM SCHOOL :) they got to go back today!

  1. Jen, that looks just right! I made that with my boys a few times when they were small, and they always loved it. It seemed to me that the potato always took more sugar than I thought possible, but it was so yummy! Try with Nutella, too!

    To be honesty I dont really care for it anymore, lol. I mean its ok, I liked it better as a kid... its sooo sugary. Never thought I would stay that cause I love my sweets, lol. I ended up using 5 cups of powdered sugar!!! I might try a different recipe but all the ones I was reading were the same.
